First Look: Concourse Restaurant Moderne Lands at Stapleton on Wedneday, May 3

Chef/restaurateur Lon Symensma is about to embark on a restaurant voyage that will expand his influence over the Denver dining scene considerably in the coming years. With the imminent arrival of Concourse Restaurant Moderne, Symensma will have three restaurants in his stable — after ChoLon and Cho77 — and has already built the infrastructure to expand beyond a trio. Concourse opens at 10195 East 29th Drive in the new Eastbridge Stapleton development on Wednesday, May 3, bringing the chef’s elegant and worldly vision to life for a neighborhood hungry for new dining options.

A Neighborhood Eatery with “Some Big City Flair”

As he tours around his newest restaurant, Concourse Restaurant Moderne, slated to open mid- to late-April in Eastbridge, chef and restaurateur Lon Symensma points out the layout of the kitchen that offers better flow for staff. The layout also gives the dining room more space and nicer views for guests because of the angles of the tables. “You learn a thing or two with each new restaurant and figure out what works best,” he says.

As Stapleton lures more culinary talent to the burbs, Chef Lon Symensma‘s third Denver concept, Concourse, is a departure, both in location and cuisine, as he moves into Stapleton’s Eastridge Town Center, at 10195 E. 29th Drive.

With his two previous projects – ChoLon and Cho77 – Symensma’s menus were inspired by his far-reaching travels throughout Asia, bringing Denver traditional dishes found across the exotic Far East, from dim sum to large, family-style plates with authentic flavors for modern palates.
