Chefs Lon Symensma and Luke Bergman have opened their new restaurant, Concourse in the Stapleton neighborhood. The two friends, who had worked together in 4-star restaurants in New York, are happy to partner for this restaurant serving breakfast, lunch, happy hour dinner and weekend brunch. The name “Concourse” hearkens back to Stapleton’s history as the city’s first airport.

We’ve got yet another opening out of Stapleton’s Eastbridge development: Concourse, from chefs Lon Symensma and Luke Bergman (ChoLon, Cho77), which opens May 3. This is Symensma’s third Denver restaurant, and his first break from Asian cuisine.

First Look: An A-Team Spreads Its Wings With Concourse Restaurant Moderne

“This isn’t Chili’s,” Lon Symensma deadpans when describing his new Eastbridge Town Center project with chef-partner Luke Bergman, Concourse Restaurant Moderne. Not that that’s what anyone was expecting from the acclaimed chef-restaurateur behind ChoLon and Cho77. But considering both the total dominance of chain restaurants in Stapleton until very recently and his vision for the place as an all-day community hub, we take his point. Concourse represents a style of fine-yet-informal dining the neighborhood is only just beginning to see (as at Cattivella next door): “A little bit of NYC in a casual environment,” as Symensma puts it.

ChoLon chef opens first non-Asian concept, launches restaurant group

Concourse Restaurant Moderne, which will be the third restaurant to open in the new Eastbridge project in Denver’s Stapleton neighborhood, will serve classical American ingredients like chicken or pork loin, but with unique touches. The tuna tartare, for example, will be cooked with a cayenne crisp batter, and guests will finish each meal with a serving of “cinnamon air,” an extremely light meringue-like treat with bits of cinnamon in it.

Lon Symensma’s Concourse Opens in Stapleton

Looking back to move forward, Concourse – named for the Stapleton neighborhood’s previous life as a travel hub  –  will officially open for business Wednesday, May 3 in Stapleton at 10195 E. 29th Drive, next to Cattivella, Next Door, and upcoming Los Chingones and Hash Tag.

Late last year, Symensma, chef and owner at ChoLon Modern Asian Bistro and Cho77, announced his next venture and tapped an old friend, chef Luke Bergman to head up the kitchen.
